Busko-Zdrój is situated in a picturesque region called “Ponidzie” which is known not only for beautiful landscapes, numerous monuments and a rich history, but also for its characteristic cuisine. To promote culinary traditions of the Ponidzie region, for years we have been organising the competition “Our Culinary Heritage” (original name: “Nasze Kulinarne Dziedzictwo”) during which competitors are rewarded for dishes and products referring to a rich culinary history of our region.
Here are examples of such products and dishes:
Anise liquor from Busko-Zdrój

The first recipe for this drink was in the convent of the Norbertines who were owners of the Busk settlement. The liquor thanks to the anise has a beneficial impact on the digestion system and is served with fat, meat dishes.

Bean from Korczyn

Bean is a plant grown on the territory of Ponidzie, especially in Nowy Korczyn, since the 16th century. It had been known here even before potato became popular. Bean just as meat belonged to the dishes eaten to celebrate holidays.
In 2004 the Bean from Korczyn won the prize PERŁY (PEARLS) at the POLAGRA Fair in Poznań and on 12 July 2010 as the first product from Ponidzie it was registered by the European Commission as a Protected Geographical Indication.
Goose

Among breeding peculiarities in the Busko district were geese. For the Saint Martin day geese were roasted with apples. This custom is cultivated by Ms Grażyna Korepta from Siesławice in her agritourist farm.
The 1st place in the category of animal products in the competition: “Nasze Kulinarne Dziedzictwo” (Our Culinary Heritage) in 2005 and in 2008 the 2nd place in the category of a regional meal and dish.
The European sturgeon

The Siberian sturgeon is a close relative of the extinct European sturgeon which lived in large numbers since the Middle Ages in the lower course of the Vistula River. In Zofia Guz’s farm where the sturgeon is bred meals of this fish have been served for a long time.
Distinction in the competition: “Nasze Kulinarne Dziedzictwo” (Our Culinary Heritage) in 2003.
